Recipe from my friend Ashlyn Weaver, they are so yummy right out of the oven!
1 ¾ cup flour
1 ½ teaspoons baking powder
½ teaspoon salt
½ teaspoon nutmeg
1/3 cup oil
¾ cup sugar
1 egg
1 cup milk
½ cup melted butter
¾ cup sugar
1 teaspoon cinnamon (or to taste)
In a bowl combine flour, baking powder, salt, and nutmeg. In a separate bowl combine oil, egg, milk and ¾ cup sugar. Combine these two bowls and gently stir until just moist. Preheat oven to 350*. Grease muffin pan, pour batter in pan 2/3 way full. Bake 17 to 20 minutes. Combine ¾ cup sugar and cinnamon in bowl. After muffins have baked roll each muffin in melted butter. Then roll in the cinnamon and sugar mixture.
