Crust-less Crab Quiche


This is a Weight Watchers recipe that my mom made a lot growing up. It is super fast and easy.


4 ounces crab meat, flaked (imitation works fine)
4 ounces shredded cheddar cheese
¼ cup chopped green onions
4 eggs
1 cup evaporated skim milk
½ teaspoon each salt and powdered mustard
1/8 teaspoon pepper
Dash of paprika

Preheat oven to 400*. Spray 8” pie plate with cooking spray; set aside. In medium bowl combine crab meat, cheese and onions; using the back of a spoon, press crab meat mixture over the bottom and up the sides of sprayed pie plate. Using a wire whisk, in a medium bowl, beat together; eggs, milk, salt, mustard and pepper. Pour over crab meat mixture. Sprinkle with paprika and bake until set, about 30 minutes. Remove from oven and let stand 5 minutes before serving.

Zucchini Egg Bake

I made this for dinner tonight, it was yummy!

3 C zucchini, chopped
1 large onion, chopped
2 garlic cloves, minced
2 T butter
4 eggs
1/2 C fresh Parmesan cheese
1/4 C minced fresh parsley, or 1 T dried
1/2 t dried basil
1/2 t marjoram
1/2 t salt
1/2 C Monterey Jack cheese, grated

In a large skillet, saute the zucchini, onion, garlic and butter until tender and set aside. In a large bowl, whisk the eggs, Parmesan cheese, parsley, basil, marjoram, and salt. Stir in zucchini mixture and Monterey Jack Cheese.

Pour into a greased 1-qt. baking dish. Bake at 350* for 25 minutes or until knife inserted near the center comes out clean. Let stand for 5 minutes before serving.
