Zucchini Egg Bake

I made this for dinner tonight, it was yummy!

3 C zucchini, chopped
1 large onion, chopped
2 garlic cloves, minced
2 T butter
4 eggs
1/2 C fresh Parmesan cheese
1/4 C minced fresh parsley, or 1 T dried
1/2 t dried basil
1/2 t marjoram
1/2 t salt
1/2 C Monterey Jack cheese, grated

In a large skillet, saute the zucchini, onion, garlic and butter until tender and set aside. In a large bowl, whisk the eggs, Parmesan cheese, parsley, basil, marjoram, and salt. Stir in zucchini mixture and Monterey Jack Cheese.

Pour into a greased 1-qt. baking dish. Bake at 350* for 25 minutes or until knife inserted near the center comes out clean. Let stand for 5 minutes before serving.

YUM -- that does sound good. If Brian liked vegetables I would so make it (I'm growing a zucchini plant in my garden and I am so excited)!

Looks pretty good! Did Kyra eat it? If she did, could you tell me how you got her to eat it? :) I'll definitely need to try this one this coming week. I'm so glad you are sharing your recipes. Now Nick won't be subjected to spaghetti variations every night.
